Who doesn't love a lettuce wrap? This meal can fit into (or be modified to) any diet. They are a perfect end to a hot summer day. We like to whip these up for an easy lunch. We don't mind them cool which makes them a great meal for our road trips.
Most recipes call for ground chicken, I prefer a small dice of thighs instead. You can increase or decrease the spice according to you own personal taste.
INGREDIENTS 2 T fresh ginger, minced 1 lg garlic clove, minced 3 T soy sauce 1 T hoisin sauce 1 t Chinese style spicy mustard 1 T sesame oil 1 T Chinese 5 spice 2 # chicken thighs 1 T avocado oil or other high smoke point oil. 1 head butter lettuce
DIRECTIONS 1. Mix together sauce ingredients, set aside. 2. Dice chicken thighs into small pieces. Season with the Chinese 5 spice blend. 3. Heat cast iron skillet over medium high heat. Add cooking oil. Heat oil until it shimmers. Add chicken and cook until it starts to brown. Add Sauce ingredients and cook until they reduce and sauce becomes somewhat sticky. 4. Serve with butter lettuce.
