Bourbon Peach Ice Cream


Living somewhere as hot as the high desert, we are always looking forward to the end of summer. We really don't start enjoying the outdoors until late September. While I am looking forward to the end of the extreme heat, I will miss summer's bounty of fresh fruit. We enjoyed one last hurrah with this amazing peach ice cream. It was lick the bowl good.


Peaches, and most fruit, tend to get icy when frozen in ice cream. To avoid an overabundance of frosty peaches, we puree the fruit that is in the ice cream and add the chunks as a topping.


INGREDIENTS 2 c heavy cream 3/4 c half and half 2/3 c sugar 1/2 c peaches, finely diced 1/4 c bourbon

DIRECTIONS 1. Peel and dice peaches. Puree 1/3 cup in separate bowl. Set aside. 2. Mix together heavy cream, half and half, and sugar in a bowl. Stir until sugar is dissolved. Place in refrigerator and chill half hour. 3. Place mixture in prepared ice cream maker. Add bourbon. Once the mixture has thickened add the pureed peaches (just a few minutes before it is finished). Run machine until peaches are well combined. 4. Place in freezer until hardened. Serve with diced peaches over top.
