Breakfast Tacos


It's Taco Tuesday and what better way to celebrate than with breakfast tacos. When going for a Mexican breakfast option, burritos are the usual go to. Shake up the routine with these flavorful tacos and start the day off right. Two types of cheese, creamy scrambled eggs, jalapenos, tomatoes and avocados deliver everything you could want for breakfast.


INGREDIENTS 8 corn tortillas, browned 4 eggs 1/4 c half and half 1/4 c fiesta blend cheese 1 t olive oil 1 avacado 2 roma tomatoes, chopped 1/4 red onion sliced 1 jalapeno, thinly sliced 1/2 c queso fresco, crumbled 1/4 c micro cilantro (can use chopped, regular cilantro) taco sauce

DIRECTIONS Heat non stick skillet over medium low heat. Whisk eggs and half and half together. Season with salt and pepper to taste. Add olive oil to pan, heat until warm. Add egg mixture and cook stirring constantly. The key to the eggs is low and slow. Once almost set, add fiesta cheese. Cook until melted and combined. Set eggs aside. Place two tortillas on each plate. Top with 1/4 of the eggs. Layer the additional ingredients amongst all tortillas and fold into tacos.
