Chicken Fajitas


Happy Fajita Day. There are so many food holidays, you can almost celebrate almost every day. What's not to love about celebrating fajitas? They are so quick, they make a perfect weeknight meal that still feels indulgent. We love to throw some fajitas together when we just don't feel like extending much effort into dinner. We quadruple this taco seasoning and keep it in the pantry in a mason jar. It is always handy to season a Mexican dish and we like it so much more than the store bought variety. It is simple to tweak to your own flavor preferences and always have on hand for any Mexican dishes you may make.


INGREDIENTS Taco Seasoning: 1/2 T chili powder 1/2 T ancho chili powder 1/4 t garlic powder 1/4 t dried oregano 1/2 t paprika 1/2 t cumin 1 t sea salt 1 t pepper pinch of coriander 1# chicken thighs 2 red peppers 2 green peppers onion 2 T olive oi 8 soft taco tortillas

DIRECTIONS 1. Mix taco seasoning together, set aside. 2. Slice peppers and onion into strips 3. Season chicken thighs with half of taco seasoning. Grill over medium heat until cooked through (about 8 minutes). 4. Heat cast iron skillet over medium heat. Add oil and heat until it shimmers. Add peppers and onions, and remaining taco seasoning. Add additional salt to taste. Cook until soft. 5. Serve with soft tacos and any condiments of choice.
