Cowboy Food

We have always been a camping family. We were both raised camping and continued the tradition when we started our own family.

A favorite meal on our excursions was cowboy food. Its is named this because it looks just like the "chow" you would see cowboys eating in old westerns.

There are many versions of this recipe and it can be adapted to your own personal tastes. Our version features chorizo and spicy kidney beans. It has that come back for more kick that will have you make it over and over. What's your favorite camping meal?

INGREDIENTS 1 # chorizo 1# ground beef 1 c basmati rice 1 can rotel 1 can spicy kidney beans 1 c basmati rice 2 c chicken broth 2 c shredded cheddar

DIRECTIONS 1. Brown chorizo and ground beef in dutch oven. Drain any excess fat. 2. Add rice, rotel, kidney beans, rice and chicken broth. Add cover and place on campfire (or on medium heat stovetop). Add coals to top of lid and cook for 20-30 minutes. 3. Stir in cheese and stir until fully incorporated.
