It's National Avocado Day and we can't be happier. Avocado's figure in our daily lives. You have to celebrate when something that tastes this amazing is so very good for you. I have been known to cut one open, and eat it with a spoon without even leaving the counter.
The craziest part is I couldn't stand them growing up. I remember going to my grandparents house. They had a couple of acres of avocado trees. My parents brought home bags of them. I wish I could go back in time and grab a couple of bags for myself.
We love making guacamole. It is such a versatile dish. You can enjoy it as a dip, as a topping or a spread. I love to add a dollop to scrambled eggs in the morning. When entertaining, we whip up a fresh batch but I have learned the value of the prepackaged single serve guacamole. No worries on eating it fast enough or having it turn brown.
INGREDIENTS 2 ripe avocados 1/4 white onion, diced 2 roma tomatoes, diced 1 clove garlic, minced 1/2 lime, juiced 1 jalapeno, chopped (seeds removed for milder results) 1/4 c chopped cilantro salt to taste
DIRECTIONS Cut avocados and remove pit. Dice into medium cubes. Add all ingredients into a service bowl and mash lightly. Stir to make certain everything is combined. Season with salt.
