Italian Tomato Relish


Nothing says summer the way a plump tomato does. This time of year the tomatoes bursting with goodness and so plentiful and they are jut begging to be included in every meal.


It's always nice to have a quick condiment to add to meals or for a quick snack. This relish was created to use when the summer tomato crop starts getting out of control. It is delicious on it's own with crackers but we have also spooned it over goat cheese on a charcuterie board. Mixed with sausage, it's a great filling for stuffed zucchini, The applications are endless.


INGREDIENTS 1 T olive oil 1/2diced red bell pepper 1/4 c diced green pepper 1/2 small yellow onion, diced 2 cloves garlic 1 T umami seasoning 2 whole star anise 1 T fresh oregano, removed from stem 1 T ages balsamic vinegar

DIRECTIONS Heat oil in a medium saucepan, add garlic and onion. Simmer until garlic is fragrant. Add peppers and cook until softened. Add umami seasoning, star anise, fresh oregano and aged balsamic. Simmer until thickened, about 15 minutes. Remove star anise before serving.
