Lobster Quesadillas


It's National Lobster Day!! What a delicious day to celebrate. We decided to stray from the traditional (although there is nothing better than steak paired with lobster) and create some lobster quesadillas. To say these were yummy is an understatement. Cheese just adds so much to everything and when you pair it with lobster, it becomes sublime. Just typing this up makes me want to have another batch.


INGREDIENTS 4 lobster tails 4 T butter, melted 2 T fresh parsley, chopped 4 m tortillas 1/2 c roasted hatch chiles, chopped 4 c shredded cheddar cheese 2 T mayo 1/2 c sour cream 1/4 c chipotle sauce

DIRECTIONS 1. Split lobster tails in half, lengthwise, with a sharp knife. Mix butter and parsley together. 2. Cook lobster tails in a hot skillet or flattop until no longer translucent, basting with the butter mixture. Remove and chop into medium pieces. 3. 1/4 c of cheddar cheese on skillet/flattop. Cook until edges start to brown, place torilla over the top. Add an additional 3/4 c of cheese one half of the top of the tortilla. Top with chiles and lobster. Fold tortilla over, cook until cheese is melted, flipping as needed to make certain outside of quesadilla is browned. 4. Mix mayo, sour cream, and chipotle sauce. Serve with quesadillas.
