Salmon and Quinoa Southwestern Salad


Can you say yum? We are always looking for new ways to incorporate smoked salmon into our meals. It's been around 110 here and this salad was the perfect end to a hot dry day. We were hoping for leftovers but there wasn't a crumb to be had. We smoke our own salmon and always keep some in the freezer. For us, these are staple ingredients and can whip this up on a moments notice.


This salad can be whipped up a million different ways. This paticular bowl was created using:


1 c smoked salmon

1/2 c sliced cherry and yellow pear tomatoes

1 1/2 c cooked quinoa

1 avacado, diced

1/2 red onion, chopped

2 c arugula

1/2 c sliced honey almonds

ranch to taste
