I love mixing seasonal fruits into every day dishes. Summertime offers so many flavors and textures to work into meals. Salsa is the perfect condiment to add anything and everything to create new flavor profiles. There's something wonderful about the sweet and spicy combo that can elevate any dish to next level.
We created this dish to use up some watermelon but will end up buying more so we can make this over and over. Just looking at the picture makes my mouth start watering again.
INGREDIENTS Salsa: 1 c watermelon, diced 1 medium mango, diced 1 jalapeno, diced 1 clove garlic, minced 1/4 c cilantro juice of 1/2 lime Slaw: 1/2 cup mayo 2 T taco seasoning juice of 1/2 lime 1 T honey 2 c shredded cabbage 1 # shrimp 3 T taco seasoning 1 can black beans 2 T taco seasoning 8 corn tortillas high smoke point oil for frying
DIRECTIONS 1. Mix salsa ingredients together. Set aside 2. Mix slaw ingredients together. Set aside. 3. Season shrimp with taco seasoning. Cook over grill (or in skillet) until just pink. 4. Drain black beans. Add taco seasoning and mash slightly. 5. Fry corn tortillas in oil until crisp. 6. Build tostadas by layering beans, slaw, shrimp and salsa.
