I kept seeing crazy korean cooking pots (dolsots) everywhere. Of course, I had to order one to join in on the craze. The plan was to make a bibimbap but, as always, impatience got the better of me. Patience has never been one of my strengths. I ended up making a bok choy and spam bowl. It turned out amazingly good.
INGREDIENTS 1 t fresh ginger, minced 1 clove garlic 1/8 - 1/4 red chili flakes (to taste) 1/2 c soy sauce 2 T rice vinegar 1 1/2 t fish sauce 2 T brown sugar 1 T peanut oil 1 T ginger 1 clove garlic 3 heads bok choy 1/2 can spam, diced and fried 2 green onions, slice sesame seeds hard boiled egg, but in half sriracha
DIRECTIONS 1. Mix sauce ingredients together. set aside. 2. Heat peanut oil in dolsot or skillet. Add ginger and garlic, cook until fragrant. Add bok choy and cook until wilted. 3. Spoon over cooked rice. Top with spam, green onions, sesame seeds, hard boiled egg, and sriracha.
