Summer Dogs



Are you celebrating National Hot Dog Day? We were never big fans of hot dogs, they just had an over processed flavor. That all changed when we found brisket dogs at our local grocery store. The new dogs changed everything. To celebrate the ever present dog on it's day, we loaded it up with garden favorites that are so abundant this time of year. We were shocked at how amazing these turned out.


INGREDIENTS For the Relish: 1 c zucchini, diced 1 c corn kernels, roasted 1 medium poblano pepper, roasted 1/2 red bell pepper, diced 3/4 c red onion juice of 1/2 lime olive oil salt to taste 1/2 c mayonnaise 5 hot dog buns 5 brisket hot dogs 1/2 c cotija, crumbled 1/4 c cilantro

DIRECTIONS Mix relish ingredients together in bowl. Heat cast iron skillet over medium heat, add olive oil. Once olive oil shimmers, add relish ingredients. Cook until softened. Add salt to taste. Set aside. Spread mayo on hot dog buns. Toast hot dog buns on griddle. To assemble: Spread may on inside of buns. Top with crumbled cotija cheese. Add hot dog. Layer corn relish, more cotija cheese, and top with cilantro.
