
It's meatless Monday and this is a great choice in the summer months. This pasta is bursting with the flavors of the garden. We pair it with some white wine for an easy weeknight meal. It also holds well if you meal prep.

INGREDIENTS
1 lb spaghetti noodles
2 tomatoes, diced
1 c pesto
Juice of half a lemon
2 roasted cloves garlic, thinly sliced
1/2 c shaved parmesan
DIRECTIONS Cook noodles al dente. Drain and toss with pesto, tomatoes, lemon juice, garlic and parmesan. Serve warm or chilled.
