Have you ever tried sunshine carrots? It was a favorite recipe from my step mom growing up. I have shared the recipe for the carrots so many times. We decided to take the flavor profile and turn it into a soup. We did cut the sweetness a bit to let the carrot flavor to shine through. The results were simply amazing. INGREDIENTS 1 t olive oil 1 T butter 4 c baby carrots 1 lg clove garlic, minced 2 c chicken broth juice of 1 m orange 1/2 c heavy cream salt and pepper to taste
DIRECTIONS Sauté carrots in olive oil and butter until browned. Add garlic and cook until fragrant, about 1 minute. Add broth, cover and simmer until carrots are tender. Add to blender and blend until smooth (adding more broth if needed to reach soup like consistency). Add orange juice and cream, blending on low. Season with salt and pepper to taste,
