Taco salad is one of the meals that was on regular rotation when I was growing up. It was a quick and easy meal my mom could throw together after working a long day. It was also a meal that everyone was excited about. It's always a favorite when it comes together quickly and tastes amazing.
We prefer to provide most of our own produce. Living in the desert southwest, lettuce is usually a hard no anytime outside of the winter. I was so excited to find this indoor hydroponic system by @MiracleGro. I now have a side table that provides our family with lettuce all year round. I harvest using the haircut method (trimming off the top of the lettuce) and stretch each planting a little further. Check it out.
INGREDIENTS 1# ground beef 3 T taco seasoning 4 c lettuce, chopped 1/2 c roasted corn 2 roma tomatoes, diced 1/2 red onion, sliced 1 medium avocado, diced 1 c shredded cheddar or fiesta cheese 1/4 crispy jalapeno salad topping 2 c tortilla chips, slightly crushed
DIRECTIONS 1. Cook ground beef and taco seasoning in skillet until browned. Set aside. 2. Mix all ingredients in salad bowl. 3. Serve with dressing of choice, we prefer chipotle ranch with this salad.
