I don't know if anything says cold weather quite the way chili does. There are so many ways to prepare it. Everyone seems to have their own special "secret" recipe. I guess ours won't be so secret anymore. This chili was created quite a few years back for a chili cook-off. I am happy to report, it won. It has been entered in a few cook off's now and is always a clear winner. Try it, tweak it, and enjoy. It's great spooned over some cornbread, with Fritos, topped with sour cream and/or cheese or quite simply on it's own.
This chili also freezes wonderfully. It's a great quick meal after a day of holiday fun!!!
What's your go to recipe for cool weather?
INGREDIENTS
2 pounds ground chuck
1 pound italian sausage (casings removed)
3 cans chili beans
1 can spicy chili beans
2 28oz cans diced tomatoes
1 6oz can tomato paste
1 onion
3 stalks celery
1 red bell pepper
1 green bell pepper
2 jalapeños, chopped
2 slices bacon, cooked and crumbled
1/2 cup smoked broth (or regular broth of choice)
1/4 cup chili powder
1 T Worcester sauce
1 T minced garlic
1T dried oregano
2 t cumin
1 T Hot pepper sauce
1 T molasses
1 t basil
1 t salt
1 t black pepper
1 t paprika
DIRECTIONS 1. Brown chuck and sausage in stock pot until browned. Add chopped peppers, celery and onion; cook stirring until softened. Add chili beans, tomatoes, tomato paste, bacon, smoked broth, chili powder, Worcester sauce, garlic, oregano, cumin, hot pepper sauce and molasses. Bring to a boil. Reduce heat and add rest of ingredients. Simmer, stirring occasionally for 2 hours. 2. Serve with favorite condiments and enjoy!!!
