Air Fried Chicken Sandwich


Winner, Winner, Chicken Dinner. This sandwich turned out so good. The air fried chicken had the perfect flavoring and an amazing crunch. This is a great casual meal that is easy to make at home. The chicken soaked during the day and was ready to go at dinnertime. It's a quick meal to put together at the end of the night.


As usual, we try to keep the carbs low to avoid a blood sugar spike (diabetes). The breadcrumbs were made from a low carb bread and my bun was a @thesolacompany low carb bun. These buns are simply amazing. You don't even notice the reduction in the carbs. Of course this would work just as well with traditional ingredients.


INGREDIENTS 1.5 c buttermilk 2 cloves garlic, minced 1 t salt 1 t pepper 2 T dried dill weed 4 chicken thighs, pounded to uniform thickness 1/2 c panko 1/2 c breadcrumbs 1 t chili pepper salt and pepper to taste 1/2 c flour 1 large egg (chicken or duck) 4 hamburger buns of choice condiments of choice: sliced tomato, lettuce, onion, pickles, mayo, mustard and anything else your heart desires

DIRECTIONS 1. Mix buttermilk, garlic, salt, pepper, and dillweed in large gallon ziploc bag. Add chicken. Squeeze out as much air as possible and seal. Marinate in refrigerator for 4 - 12 hours. 2. Mix panko, breadcrumbs, chili pepper, salt and pepper together in shallow bowl. Place flour in a separate shallow bowl. In a third shallow bowl add 1/4c of the marinade and large egg, whisking until combined. 3. Remove thighs from remaining marinade. Dredge in flour, dip in egg mixture and coat in breadcrumb mixture. 4. Place chicken in air fryer basket and coat lightly with cooking spray. Air fry for 15 minutes at 400. 5. Assemble sandwiches. Place chicken on bottom bun and add your preferred condiments. Place top of bun on sandwich and enjoy.
