Southwestern Boiled Peanuts


Do you love boiled peanuts? Both of us were well into adulthood before having them for the first time. We were visiting our son who was currently stationed at Ft Benning in Georgia and were urged by everyone we knew to try them the first chance we had. One cup later, from a local gas station, and we were hooked. It got so bad, we stopped for a cup on the way to the airport and ate them all the way until we reached security.


Living in the desert southwest, boiled peanuts are hard to come by. Luckily, Amazon came through and delivered some raw peanuts so we could make a batch at home. As always, we had to put our own stamp on them. We had purchased roasted hatch chiles at a local farm and thought they would be the perfect addition. Give them a try and let us know what you think.


INGREDIENTS 3 # raw peanuts 32 oz chicken stock 1 can rotel 1 poblano chili, cut into strips 2 cloves of garlic sliced

DIRECTIONS 1. Place all ingredients in a pressure cooker and cook on high for an hour and forty minutes. Let pressure naturally release. 2. Serve with cooking liquid. Top with additional hot sauce if preferred.
